We won this coffee at the 2025 Grounds for Health charity auction, where every dollar of the winning bid funds cervical cancer screening for women in coffee-growing communities. Grown at 1,800 metres, hand-picked and washed-processed on the estate, it delivers the layered sweetness and vivid fruit that made El Injerto's Pacamara a legend. Roasted into just 280 boxes — once it's gone, it's gone.

Finca El Injerto has belonged to the Aguirre family since 1874, when Jesús Aguirre Panamá acquired the land in the highlands of Huehuetenango, naming it after a fruit native to the region. Coffee has been grown there since 1900, and today the third and fourth generations of the family run the estate with a singular discipline: El Injerto grows, processes and mills only its own coffee, never buying a single cherry from outside the farm. That total control from seed to mill has made it the most awarded farm in Cup of Excellence history — and the most celebrated name in Guatemalan coffee.

THE TERROIR

El Injerto sits at 1,800 metres in La Libertad, Huehuetenango — Guatemala's highest and driest coffee region, where cool nights and mineral-rich mountain soils slow the ripening of each cherry and concentrate its sweetness. The variety is as remarkable as the place: Pacamara, a cross of Pacas and Maragogipe bred in El Salvador and perfected over three decades, produces some of the largest beans of any arabica and one of the most complex cups in coffee. Demanding to grow and famously temperamental, it rewards only the finest farms — which is why it became El Injerto's signature, and the variety behind most of its Cup of Excellence titles. This lot, from red-cherry Pacamara, was washed, dry-fermented and slowly sun-dried on the estate.

SUSTAINABILITY

El Injerto was the first coffee farm in Guatemala to be certified carbon neutral, and the estate is Rainforest Alliance certified — this very lot carries the certification. The Aguirre family's commitment extends to the people who make the coffee possible: medical and dental programmes, training and safety equipment for every worker, and infrastructure that supports the wider community. And this particular coffee carries a further purpose: it was donated by the estate to the Grounds for Health auction, so the price we paid at the hammer went to preventing cervical cancer in coffee-growing communities around the world.
