MOOR HALL:

Moor Hall Builds Its Espresso Martini on Difference Coffee

The three Michelin starred restaurant's tableside Espresso Martini starts with the Brazil Yellow Bourbon.

Moor Hall, Mark Birchall's Lancashire restaurant that now holds three Michelin stars, published its own twist on the Espresso Martini in April 2022, and the coffee in it is Difference Coffee's Brazil Yellow Bourbon.

The restaurant's version swaps the usual coffee liqueur for Pedro Ximénez sherry to add complexity and cut the sugar, and is prepared at the table in the lounge as an after dinner digestif. The espresso is brewed by hand on a manual ROK espresso maker using the Brazil Yellow Bourbon, 100% specialty Arabica with notes of cocoa, caramel and hazelnut and a light citrus acidity, and the drink is finished with three drops of 1946 Pedro Ximénez Toro Albalá, added with a pipette.
