What actually makes coffee “specialty”

There are two species of coffee grown commercially: Robusta and Arabica. Robusta is hardier, higher in caffeine, and generally considered the rougher of the two. Arabica is more delicate to grow, but yields sweeter, more complex flavours — it's why roughly 70% of the world's coffee (and effectively all of the coffee worth talking about) is Arabica. Difference uses no Robusta anywhere in the range.

Within Arabica, coffee is graded on a 100-point system created by the Specialty Coffee Association. Only single-varietal Arabica scoring 80 points or above earns the “Specialty” designation, and only licensed graders who've passed a rigorous certification are allowed to score it. Specialty coffee accounts for roughly 1% of global production — everything Difference sells sits inside that 1%.

Why this matters to you: “premium” and “luxury” are marketing words nobody regulates. An 80+ score from a licensed grader isn't.

Made for the machine you already own

Espresso and capsule systems use the same pressure principle. The difference is what happens before the capsule reaches you: beans are ground and sealed into an individual, oxygen-free portion at the point of roasting, which protects freshness far longer than an opened bag of whole beans ever could.

That's the whole premium, in practice — not more equipment, not more ritual, just better raw material protected properly until the moment you brew it.

Water: the ingredient people forget

Water is the only other ingredient in your cup, and it can make or break an otherwise well-balanced coffee. Very mineral-rich water can taste great on its own but overwhelm a coffee's acidity; tap water in hard-water areas can do the same. The safest default is filtered water, or a low-mineral bottled water.

Quick tip: a basic filter jug (Brita, BWT) is a bigger upgrade to your morning cup than most equipment purchases.

Taste with confidence

You don't need to identify twelve flavour notes — you only need to notice what changes from one cup to the next.

Sweetness

Does it feel naturally sweet, or do you reach for sugar?

Brightness

Think lift and liveliness, not simply “sour”

Body

Light, silky, creamy, or weighty?

Finish

What remains after you swallow, and for how long?

Flavour notes like “dark chocolate” or “macadamia” are prompts, not instructions. If you simply prefer one cup to another, that's a complete tasting note.

Rare lots, briefly

The scarcity isn't the place — Jamaica, Panama, Indonesia and Hawaii are all established coffee origins. What's genuinely rare is the specific lot: a limited harvest from a specific award-winning producer, bought directly rather than picked from a generic regional supply.
